Hiking, while a major part of our culture today, wasn’t always the ubiquitous weekend warrior activity is today. Before Walden, Thoreau, and John Muir there was Romantic and Transcendentalism movement, art and cultural shifts to the natural order and time spent being outside. A reaction to the Industrial Revolution, train schedules, 90 hour work weeks and more.
The idea of taking a hike turned romantic and peaceful. Since the 1800s, hiking has steadily built into the hobby that it is today. This is especially true in the early 1900s to mid-century, as technological innovations allowed us to push ourselves farther and accomplish more in the fields of mountaineering and hiking than previously thought. Furthermore, the popularity of rock climbing helped propel hiking deeper into the cultural vernacular as most climbing areas require a small hike to reach. Hiking is, really, a gateway drug to other, stronger versions of outdoorsmanship. Skiing, rock climbing, and canyoneering are all just things to do along the trail. It was started by the UN General Assembly, with the goal of getting educational institutions and the general public to see tolerance as a staple of society. And it came after the United Nations declared a Year for Tolerance in 1995.
In 1995, UNESCO created the Declaration of Principles on Tolerance as a way to define and provide awareness of tolerance for any and all governing and participating bodies. That day in 1995 was November 16. Now, as an anniversary of that Declaration, we celebrate the International Day for Tolerance every November 16 to help spread tolerance and raise awareness of any intolerance that may still be prevalent in the world today. Although we should be tolerant every day, it’s always good to have one occasion to remind us just how important tolerance is. Additionally, UNESCO created an award to recognize those with great achievements in promoting the spirit of tolerance or non-violence in fields such as science, culture, and the arts. The UNESCO-Madanjeet Singh Prize and the UNESCO International Day for Tolerance both recognize that tolerance is a universal human right. Surprisingly, something that most of us associate with fun after work in mostly urban settings, actually got its start with the U.S. Navy as far back as 1914. (However, in 1900 “Happy Hour” social clubs did exist.)
Happy Hours, as we know them today, got started during the early days of the Mexican-American war. During the occupation of Veracruz Harbor, American sailors aboard the U.S.S. Arkansas were the subject of desperate reporters looking to fill out mundane stories after earlier fighting had used up all the exciting copy. Notices, as in this lead in the “Washington Times” of May 1, 1914, “ ‘The Happy Hour’ Aboard Ship Makes U.S. Tars (short for “tar heels”, a slang for sailors from North Carolina) Contented.” were common. After a busy day, happy hours boosted morale with boxing matches, dancing and drinking. (Although liquor was expressly banned from naval vessels starting in 1899, sailors may have sneaked booze onboard.) By the end of WWII, happy hours were a “thing.” The relaxing practice had spread throughout U.S. naval fleets. But on April 25, 1959, a “Saturday Evening Post” article popularized, “happy hour” for everybody outside the Navy. According to “Bustle,” an article entitled, “The Men Who Chase Missiles” described the hazards for people who “ lived and worked on remote island outposts tracking Cape Canaveral’s missile launches… “Except for those who spend too much during “happy hour” at the bar — and there are few of these — the money mounts up fast.” Happy Early 42nd Birthday to Danny, the staff and participants hope you have a wonderful birthday.
Recipes and many historians believe that Scottish chicken frying techniques (lard and no seasoning) and West African chicken pan frying techniques (palm oil, lots of seasoning) were combined by enslaved African and African-Americans in the antebellum South and, thusly, fried chicken as we know it was born.
Is it possible that someone happened to put a deliciously, golden crispy slice of fried chicken between two slices of bread with a couple pickles during that time? Yes. In fact, ads found in newspapers for fried chicken sandwiches pre-date the time period that Chick-fil-A claims to have invented it. It’s great marketing on Chick-fil-A’s part, but faulty history. The inventor of the fried chicken sandwich is (probably) just as shrouded and forgotten in history’s greasy pages as the inventor of fried chicken itself — or dumplings, or empanadas for that matter. It’s become such a staple in our cuisine it’s hard to pinpoint its advent to one person. And, while the fried chicken sandwich has thrusted its way into cultural ubiquity, its roots are marred in Jim Crow-era racism. Post Civil War, African American individuals weren’t allowed to raise expensive meats (such as steak and pork) so were relegated to rearing chickens, which is how the stereotype of associating African Americans with the dish came about. It was often all they could make, so they made the best of it. But over time the delicious appeal of fried chicken spread its proverbial wings and took flight into the hearts of Americans everywhere. It’s hard to deny the combination of fatty cuts of chicken, marinated in buttermilk, dredged in spices and batter, and then deep fried in oil as anything other than delicious. The story of candy begins in India. Between the 6th and 4th centuries BC, the Persians and Greeks learned that the people in India had, what they called, reeds that make honey without bees. These reeds were actually sugarcane, which is indigenous to Southeast Asia. Ancient Indians would boil sugarcane juice, turning it into individual pieces of sugar, which they called “khanda.”
Before sugarcane was domesticated outside of Asia, honey was used in ancient China, the Middle East, Egypt, Greece, and Rome to coat fruits and flowers, which would preserve them and turn them into a form of candy. Before the Industrial Revolution, candy was used as medicine to either calm the digestive system or cool the throat. In the Middle Ages, candy was mostly consumed by the wealthy and was made of sugar and spices to aid digestive problems, which were very common, as food was neither fresh nor balanced. Though the combination of bread filled with cheese and meats has been enjoyed for years prior, the creation and naming of the sandwich has been attributed to the 4th Earl of Sandwich, John Montagu. In 1762 the earl, who was fond of gambling, asked his cook to prepare him a meal that wouldn’t require cutlery nor interfere with his 24 hour long gambling streak. The cook gave him sliced meat between two pieces of toast, which allowed the earl to have one hand free to continue his game.
Of course, neither the earl nor the cook were the actual inventors of the sandwich. It is said that prior to this aforementioned event, Mantagu had visited the Eastern Mediterranean and saw sandwiches served by the Greeks and Turks with their appetizers, and asked his cook to copy their methods for its convenience. By the Revolutionary war a few years later, sandwiches were a well established English meal. Day of the Dead, or Día de los Muertos, is a traditional Mexican holiday celebrated November 2. On this day, it is believed that the souls of the dead return to visit their living family members. Many people celebrate this day by visiting the graves of deceased loved ones and setting up altars with their favorite foods, drink, and photos.
